Upstairs meals disappear quickly and make less cash compared to those served downstairs

I noticed that the food I put upstairs finishes too quickly and yet my cash remains low.I can hardly keep up,especially with low cash.I put the same meals downstairs and make more money.Why is it so?Please explain this.I thought I will make more money by going upstairs.I love my upstairs restaurant,but I'm sad that I am not making more money.
