I'd like an option to hide the dock icon and display a OneTask icon in the menu bar. This could also allow an option to hide the tab at the top of the screen, which I really don't care for.

Hi

For now you can use the blue bottom toggle to hide the bar at the top of your screen.
If you don't care about the bar, you mean you would like the name of the task displayed only in the menu bar ?

I mean I would like to see nothing displayed whatsoever except for an icon in the menu bar, and the intermittent nag popup where it flashes your task to make sure you're still working on it.

Even just the blue bottom toggle is distracting to me. :)

yes
a global keyboard shortcut to set foreground OneTask window is completely sufficient

exactly like Typinator or BetterSnapTool.
This apps turns in background task.
